
Need something sweet? Chocolate oatmeal chews are a simple and easy recipe to make. The ingredients are probably already available in your pantry, so if you crave chocolate, you can easily whip these up.
These cookies are also easy to tweak for a healthier version – just swap the semi-sweet chocolate chips for dark chocolate chips, and the white sugar for coconut sugar. You don’t have to feel guilty if you have more than one!
Baking time 6- 8 minutes
Makes about 6 dozen
Ingredients
- 1 pack (12 ounces) semi-sweet chocolate chips
- 1/2 cup butter
- 1/2 teaspoon salt
- 3 eggs
- 3/4 cup white sugar
- 1 cup rolled oats
- 1 tsp. vanilla extract
Procedure
- Preheat oven to 375 degrees F. Grease cookie sheet with butter or shortening.
- Melt the semi-sweet chocolate chips on top of a double boiler over hot water until there are no clumps, then remove from heat. Stir butter and salt into melted chocolate.
- In a large mixing bowl, beat eggs until thick and lemony in color. Gradually add in sugar, beating until very thick. Stir in chocolate mixture, then add in the rolled oats and vanilla extract.
- Use a teaspoon and drop the mixture in a round shape onto the greased cookie sheet. Make sure there is enough space in between the chocolate oatmeal mixture to keep the chews from sticking to each other after baking.
- Bake for 6 to 8 minutes. Remove from cookie sheet while still warm.
- Serve and enjoy!
