Whether you’ve prepared rockfish before or are trying it for the first time, here are some frugal baked rockfish recipes you are sure to enjoy.

Easy Baked Rockfish

If you want to keep it simple, here’s an easy baked rockfish recipe that anyone can master.

You’ll need:

  • 1 large rockfish: cleaned, gutted, and with the head removed
  • 3 cloves of garlic
  • 2 tbsp. butter
  • Kosher or sea salt (to taste)
  • Fresh ground black pepper (to taste)

Pat the rockfish to ensure it is dry, then place it in a baking or casserole dish. Chop the garlic, then sprinkle it on top of the fish. Next, rough chop the butter and distribute the chunks over the rockfish. Finally, sprinkle it with salt and pepper.

Cover the dish with foil or an oven-safe lid, and place in an oven that is preheated to 350 degrees. Bake for half an hour, then serve.

Baked Rockfish Fillets

If you prefer to work with fillets instead of a whole rockfish, here is a frugal recipe to try.

You’ll need:

  • 5 lbs. rockfish filets
  • ½ cup slivered almonds
  • ¼ cup melted butter
  • 2 tbsp. lemon juice
  • 1 salt
  • ¼ tsp. ground black pepper
  • ¼ cup minced parsley (optional)

Place the rockfish filets in a baking dish then sprinkle them with the almost and (optional) parsley. Combine the melted butter and lemon juice, then pour the mixture over the fish. Sprinkle salt and pepper over the top, then cover the dish with foil or an oven-safe lid. Bake the fish for 10 minutes at 350 degrees. Then, remove the cover and cook until tender (approximately 10 additional minutes). Serve.

Baked Rockfish with Peach Salsa

If you are looking for something a little adventurous, give this recipe a try.

You’ll need:

  • 1 lbs. rockfish filets
  • ¼ cup extra virgin olive oil
  • ½ small onion, chopped finely
  • 1 large peach, cubed
  • 2 tbsp. fresh cilantro, chopped
  • 1 tbsp. lime juice
  • Salt (to taste)
  • Pepper (to taste)

Rub the rockfish filets with the olive oil, salt and pepper, and place in a baking dish. Preheat the oven to 425 then bake the fish for 8 to 10 minutes, or until flaky.

While the fish bakes, combine peach, onion, lime juice and cilantro, adding salt and pepper to taste. Serve the fish topped with the peach salsa.
