
Here’s a glazed pumpkin cake recipe that’s really easy to make and tastes like you worked harder than you actually did to make it.
Best of all, it costs less than half of what you might pay for one from the bakery, serves eight to ten people and only takes just 50 minutes to make — 35 of that is oven time.
Glazed Pumpkin Cake
Ingredients
1 box yellow cake mix
1 15 oz. can plain pumpkin puree — not pie mix
2 eggs
Glaze
⅓ cup apple cider
⅓ cup whole milk
1½ cups confectioner’s sugar
½ teaspoon pumpkin pie spice
Directions
1. Preheat oven to 350 degrees, 325 degrees if using a glass pan.
2. Grease a 9 x 13 glass pan or bundt style pan.
3. To prepare the cake batter, combine the cake mix, pumpkin puree, and eggs together. It will come out thick.
4. Spread the batter out in the greased pan.
5. Bake it for about 35 minutes at 325 degrees if baking in a glass pan or 350 degrees in any other pan.
For the Glaze
1. Pour the cider into a pot on the stove and boil it reduce the cider by half, constantly stirring for about five minutes. Watch it carefully as it can burn quickly.
2. Turn off the heat, and when the cider is cooled, add milk, pumpkin pie spice, and confectioner’s sugar. If the glaze is too thick add a little more cider and stir until the right consistency.
3. Set the glaze aside to cool off until it’s ready to use.
4. Pour the glaze on top of the cooled cake and enjoy!
