Recipe Idea: Fresh Tomato Salsa (Pico de Gallo)

Having the most frugal grocery budget in the world isn’t going to help you and if you can’t put together at least a few healthy, tasty, and cheap eats.

With the abundance of tomatoes that we’ve harvested from our garden, I have been incorporating fresh tomatoes into more of our meals. One of my favorite new tomato dishes to make is fresh salsa. Salsa goes great with chips, scrambled eggs, and tacos.  It keeps well for a few days in the fridge.  And when you make it fresh at home, it’s actually pretty healthy.

Fresh tomato salsa

Ingredients:

  • 1 to 1.5 lb tomatoes, chopped into small chunks ($1 – or free from the garden!)
  • 1/2 cup onion, finely chopped ($0.25)
  • 1 jalapeno, finely chopped ($0.25)
  • 1/4 cup cilantro, finely chopped ($0.10)
  • 1 tsp salt (< $0.05)
  • Juice of 1/4 lime ($0.10)
  • Mix all of the ingredients together in a medium-sized bowl and then chill it in the fridge for about 1/2 an hour.  Serve with your favorite dish!

Servings: 4-5

Cost per serving: $0.45

Frugal hack: Tomatoes are pretty easy to grow!  If you can get your tomatoes from the garden, this salsa literally costs cents to make.
